Mashed Potatoes with Horseradish Recipe

What You Need
5 medium potatoes, peeled and quartered
1/2 teaspoon salt
2 tablespoons butter
Freshly ground pepper
1/2 cup sour cream
1 tablespoon horseradish
2 teaspoons minced parsley
What To Do
1. Cook potatoes in boiling, salted water, in medium-size saucepan, until tender.
2. Drain, then mash with 1 tablespoon butter and pepper to taste.
3. Add sour cream, horseradish and minced parsley, and whip.
4. Transfer to serving bowl, top with 1 tablespoon melted butter, and serve.
