Southern Summer Squash Recipe

Try it Southern style with this Southern Summer Squash recipe.
What You Need
1 1/2 pounds yellow squash
3 tablespoons bread crumbs
2 tablespoons margarine
2 egg whites
1 tablespoons minced onion flakes
2 teaspoons margarine
What To Do
1. Preheat oven to 350F.
2. Wash squash and slice about a quarter-inch to half-inch thick.
3. Place squash in pot of water and cook on stovetop until squash are soft. Drain.
4. Mash squash in a large bowl and 2 tablespoons margarine, egg whites, onion, and 1 1/2 tablespoons of bread crumbs. Mix well.
5. Transfer mixture into greased baking dish. Dot with remaining butter and sprinkle remaining breadcrumbs over top.
6. Bake 45 minutes.
